Babi Kecap - Pork in Soya Sauce

Cooking pork dishes are the my most favorite thingies! Today, I chose babi kecap or pork in soya sauce for this weekend. Easy but I learned a lot. Thanks to a recipe by serdadoedapoer. Well I didn't follow all the ingredients completely though but, still  I will share the recipe since I succeeded cooking a yummy dish after all.

My ups and downs:
1) When slicing the porkies. I didn't get it cut by the butler, lol!
2) What is pe kak? Ang ciu?


Ingredients


1/2 kg pork (skin and fat, more lard is preferrable) cut into square est. 1cm x 1 cm.
3 cloves of garlic, crushed
1/2 tbsp black pepper
1 tsp salt
1 tbsp brown sugar / sugar
1/2 tsp tamarind (asam jawa)
1/2 cup Ang ciu / Red Wine (arak)
2 pieces of star anise (pekak / bunga lawang)
thumb size of ginger, cut into five slices (can be replaced by galangal/lengkuas)
1 leek, chopped 3 parts
2 tbsp soy sauce
1 L water
1 tbsp cooking oil

Directions

1. Mix meat with garlic, pekak (crushed) and black pepper.
2. Preheat a frying pan with oil, saute meat until half-cooked.
3. Add water along with the rest of the other ingredients except ketchup and ang ciu, let the meat becomes tender -  I need about 30 mins or so.
4. Last, add the ketchup and ang ciu.
5. Tasting and correcting, and ready to serve.
